Job Overview


  • Responsible in assisting to provide control, direction and support to Retail and Food & Beverage operations
  • Directly responsible for the posting and monitoring of retail, food & beverage costs and inventory transaction documents
  • Provides direction and support to all outlets in planning and usage of inventory and cost
  • Provide accurate, timely and meaningful information for decision making, maintain data systems integrity and ensure compliance with budgets


Key Roles & Responsibilities

  • Assists in the daily, weekly, and month end task
  • Reviews the transactions in the inventory system on a daily, weekly, and monthly basis; This includes reviewing the daily direct purchases, warehouse/ outlet transfers, outlets cost transfers
  • Reviews food and beverage recipes to ensure appropriate margins are maintained
  • Runs daily sales reports
  • Reviews daily cost transfers to ensure that reasonable quantity and type of transfers are done within kitchens/ outlets
  • Links recipes to ensure that all menu item sales are linked to a relevant recipe
  • Conducts a daily / weekly spot check and monthly stock take on warehouse and outlets inventory items
  • Assists in updating figures of inventory balance, cost of sale, spoilage/wastage, and stock take variance account to ensure P&L accuracy
  • Prepares the daily cost report
  • Monitors the warehouse and outlet open transactions
  • Works with management to help devise and implement business improvement projects
  • Ad hoc tasks as assigned by management

Key Performance Indicators


  • Ensures all are accurately posted in the system
  • Ensures all physical counts are accurately done in compliance with the company’s SOP
  • Provides daily cost reports to outlets and recommendations to assist in meeting budget requirements
  • Monitors of spoilage/wastage


  • Monthly reporting of spoilage/wastage
  • Daily reporting of consolidated costs
  • Monthly reporting of physical stock take results

  • Ability to communicate to all levels of management

Requirements & Qualifications


  • Minimum 2-year experience in management accounting or analysis preferably in the F&B / hospitality sector
  • Experience in the gaming industry or in a large hotel environment with multiple F&B outlets preferred


  • Education in Finance / Business or equivalent



Skills / Competencies

  • Professional presentation and communication skills with the ability to build relationships at all levels within the organization
  • Very good PC skills, particularly Excel
